I have to admit that homemade ravioli is something I really have to commit to making but I do LOVE good ravioli and was really happy to find, what I consider to be the best packaged “fresh” pasta I’ve tried in a long time. The problem with so many “fresh” pastas are that they are rubbery and slimy – especially the ravioli – but the Monterey Pasta Company does a fine job of creating ravioli pockets of thin, delicate pasta, which melt in your mouth. Two of the wonderful selection are now made with organic ingredients, which I love.

I simply toss the cooked pasta in some really good olive oil, with a little garlic, red chilli pepper flakes and plenty of good Parmesan and there you have it – a crunch green salad and you are set.
