  1. yes – very easy!
    I chopped & roasted: 1 red bell pepper, 2 zucchini, 1cup of tiny broccoli florets (coat with olive oil and place in hot oven for 3–40 mins.)
    Meanwhile I prepared the quinoa according the the box directions. When the veggies were done, I combined them into the quinoa and seasoned with sea salt and cracked pepper. Finally, I seared the sea scallops in hot olive oil and garlic (2 minutes on each side), and then placed them on top of a generous mound of the quinoa. I topped each bowl with chopped flat leaf parsley. It’s simple, clean and really tasty.
